Veg Mayonnaise Sandwich
This simple and quick Veg Mayonnaise Sandwich just needs a few ingredients – Mayonnaise, Pepper, oregano, Veggies, Bread Slices, Red Chilli Flakes, spread cheese and Butter.
Veg Mayonnaise or simply Mayonnaise Sandwich is a quick and easy breakfast recipe that can be prepared quickly. The other name of this recipe is Veg Mayo Sandwich. There are several Sandwich Recipes that can be prepared in different ways and different styles since the taste varies from one sandwich to another.
Veg Mayonnaise Sandwich is the most common sandwich that we find in a stall whenever we are out of our home. It is a suitable go-to breakfast recipe for office-going people. Whenever you are in a hurry for your office, you can prepare this sandwich in a quick time. The speciality of this sandwich is the use of Mayonnaise which adds taste to it.
How to Make Veg Mayo Sandwich step by step with photo
Ingredients:
Bread – You can use any Bread as per your choice and availability eg. white Milk Bread, Brown Bread, Multigrain Bread, or even Whole Wheat Bread etc.
Mayonnaise – I suggest you use the normal mayo, for the best taste, You can also use flavoured mayonnaise for this sandwich, for an added taste.
Vegetables – I like to make this sandwich with finely chopped or grated veggies, like onion, cucumber, carrot, tomato, corn and capsicum, but you can go ahead and add more veggies.
Butter – It adds a little more flavour, to the sandwich.
Spread Cheese- it’s optional, my kids like cheese and it also adds a little more flavour, to the sandwich.
Seasonings – You can add flavour to the sandwich as per your taste, such as black pepper, red chilli flakes, oregano etc.
Method:
- Mix mayonnaise, cucumber onion, carrot, capsicum, tomato, corn, oregano, black pepper and red chilli flakes in a bowl.
- Cut the crust of bread and apply butter over the bread slices.
- Then, Apply a generous portion of the veggie mixture evenly on the bread slice.
- Finally, apply butter/cheese over other bread slices and cover the filling with this bread slice.
- Slice into three or four pieces as needed.

Serving Suggestion:
- Toasted bread-I have made this vegetable mayo sandwich without toasting the bread, but you can also use toasted bread for the sandwiches.
- Grill Sandwich- I would not suggest you grill or toast the sandwiches with the mayo and vegetable mixture, because when mayonnaise gets heated up, it does not taste that good.
- Veg Mayonnaise Sandwich can be served as a breakfast or can be packed into a Kid’s tiffin snack.
- Mayo- You can even use flavoured mayonnaise in place of plain one.
- Bread- You can use any type of bread like white bread or brown bread or whole wheat bread without the outer crust as per your requirement and taste.
Variations:
Hung Curd– You can substitute mayonnaise with hung curd/yoghurt. It gives the same creamy texture as the mayonnaise sandwich.
Chutney & Sauces- For a spicy Indian flavour, you can also add little green coriander chutney to the sandwich mixture, instead of chutney you can add ketchup, chilli sauce, mustard sauce or basil pesto.

Materials
- 1/4 cup carrot grated
- 1/4 cup onion chopped
- 1/4 cup green capsicum chopped
- 1/4 cup tomato chopped
- 1/4 cup red capsicum chopped
- 1/4 cup sweet corn steamed
- 1/4 cup cucumber chopped
- 1 cup Mayonnaise
- 1 teaspoon chilli flakes or to taste
- 1/2 teaspoon oregano optional or as per your taste
- 1/4 teaspoon grounded black pepper or to taste
- Butter as required
- Cheese Spread as required
Instructions
- Mix mayonnaise, carrot, onion, carrot, tomato, sweet corn, cucumber, green and red capsicum, chilli flakes, Oregano and black pepper in a bowl.
- Apply butter and cheese as per your taste over bread slices.
- Keep some filling over one bread slice and cover with another bread slice.
- Cut into triangles and serve.

Notes
For the vegetables: you experiment and add vegetables of your choice such as mushrooms, spinach, green peas, potato and shredded cabbage, etc. For butter: You can use olive oil in place of butter. Mayonnaise: you can also use Hung curd/yoghurt instead of Mayonnaise. It gives the same creamy texture as the mayonnaise sandwich.
