Ingredients:
- Fresh Mangos: Make sure you use ripe mangos for juicy, sweet freshness.
- Tomato: If, however, you do like to add tomatoes, seed the tomatoes, and dice them finely, mix them with the rest of the ingredients.
- Onion: Adds more colour, crunch and mild onion flavour. I like red onions but you may also use green onions
- Bell pepper: I use green and red bell pepper, but feel free to substitute for whatever colour bell pepper you have.
- Cucumber: Cucumber: You can use any variety of cucumbers.
- Lime Juice: you can use fresh or bottled lime juice and use more or less to taste depending on the sweetness of your mangos.
- Coriander leaves/Cilantro: It gives a refreshing taste to the Salsa. You can use more or less to taste.
- Green chilli or Jalapeno: You can remove the seeds and the white veins of your jalapenos or chilli because these pack the fiercest heat.
- Salt: Use more or less to taste.
- Chilli flakes: Mangos and chilli flakes are a match made in heaven.
- Sugar: Use more or less to taste.
Preparation
Chop mangos and vegetables: The size of the chopped ingredients depends on your requirements and taste, you like chunkier salsa or finer salsa.
Method:
In another bowl mix other ingredients the lime juice, red pepper flakes, sugar, salt and green chilli.
Combine the diced mangoes, bell peppers, tomatoes, onions, and cilantro in a bowl.
Add lime juice, chilli flacks and salt mixture. Give everything a good mix, taste for seasonings and adjust.
Cover the bowl and refrigerate the salsa for 30-60 minutes before serving, this helps the flavours to develop and mingle rather than serving it right away.
