Ingredients
  • 1 cup Green Peas
  • 1 tablespoon Ghee or unsalted butter
  • 1 liters full fat Milk
  • Sugar to taste
  • pinch of saffron
  • ½ teaspoon Green cardamom powder
  • 1-2 tablespoon Raisins or as required
  • cashew nuts and almonds sliced as required
Instructions
  1. Boil the milk in a heavy-bottom deep pan over medium heat, till it reduces to half its original quantity while stirring constantly.
  2. Wash the green peas carefully.
  3. Grind the green peas coarsely.
  4. Add saffron into milk and mix it well.
  5. Heat ghee in a Heavy bottom pan and allow it to melt.
  6. Add Green Peas into a pan and cook on low-medium flame. Keep stirring continuously.
  7. Cook for 5-8 minutes over medium flame, when ghee starts separating from the past.
  8. Add raisins, cashew nuts, and almonds into the roasted peas.
  9. Mix well and cook for 2-3 minutes.
  10. Reduce the flame and add the milk.
  11. Add saffron milk in the roasted green pea paste and cook.
  12. Add sugar and cardamom powder in kheer and cook for 2 more minutes.
  13. When kheer gets thick in consistency and is ready.
  14. Turn off the flame and serve kheer in a bowl.
Notes
keep stirring at regular intervals.
You can use any dairy-free milk instead of full-fat milk to make it dairy-free version.
you can use diet sugar instead of regular sugar.
