Veg Cheese Corn Grilled Sandwich
A Veg cheese corn grilled sandwich … yes, you heard it right. I am so excited to share this recipe with you. it is an excellent snack for tea time or kids’ tiffin box. Veg cheese Corn sandwich is a buttery, yummy and melt-in-mouth sandwich loaded with corn, cheese and other veggies. This is one easy-to-make sandwich that can be prepared in an instant with a handful of ingredients yet tastes so yummy.
This sandwich is a great way to include (sneak) some veggies in your kid’s diet. Serve with ketchup or sauce or a dip of your choice. A glass of smoothie, milkshake or fresh fruit juice would make a perfect addition.
Easy to pack for kids’ school lunch boxes or serve as a filling after-school snack. The sandwich filling can be made ahead especially when planning for kids’ school boxes. It stays fresh until lunchtime.

How to Make Veg Cheese Corn Grilled Sandwich step by step with photo:
Ingredients:
Bread – You can use any Bread as per your choice and availability eg. white Milk Bread, Brown Bread, Multigrain Bread, or even Whole Wheat Bread etc.
Sweet corn – I have used frozen corn which is handy for a quick fix, but you could use corn from fresh corn cob as well. Also cooked the corn and then used it to make a sandwich.
Cheese – For this sandwich, I like to use frozen shredded mozzarella. but you could use cheddar cheese too along with mozzarella cheese.
Vegetables – I like to make this sandwich with finely chopped or grated veggies, like onion, tomato, corn and capsicum, but you can go ahead and add more veggies.
Butter– I have used butter for toasting bread which adds texture and taste to the sandwich.
Seasonings – You can add flavour to the sandwich as per your taste, such as black pepper, red chilli flakes, oregano etc.
Method:
- Heat the butter in a broad pan, add the chopped onion, and saute on a medium flame for a minute.
- Add chopped tomato, and saute on a medium flame for a minute.
- Add coloured capsicum, corn and cheese and saute on a medium flame for a minute.
- Finally, add spices like black pepper, chilli flakes, and oregano and saute on a medium flame for a minute while stirring continuously.
- Spread the corn mixture on the bread evenly over it.
- Sandwich it with another bread slice.
- Apply the butter on the bread slice and keep aside.
- Place this sandwich in a pre-heated griller with the butter side facing downwards.
- Now, apply butter to another bread slice.
- Grill the sandwich till it turns crispy and brown from both sides.
- Cut the sandwich diagonally into two portions.
- Serve immediately.

Suggestions and variations:
Vegetables & Filling:
I have used onion, tomato, capsicum along with corn but you can add green peas, mushrooms and carrots etc. as per your choice and availability to this sandwich filling.
You can customize spinach corn sandwich filling according to personal preference.
Saute:
I don’t like the raw smell of onion and veggies so I salute them in butter for a few seconds but You can use them raw also.
Cheese:
You can use mozzarella, cheddar, monetary jack, or any other cheese you like grilled.
Extra Cheesy:
You can add more grated cheese to the cheese sauce or cheese slice to the sandwich while assembling it. Try mixing and matching with various cheeses to see what you like!
Bread:
Brown bread or multigrain bread can be used instead of white bread.
Grilling:
- Grease the sandwich maker well to avoid the sandwich sticking to the plate.
- If you don’t have a sandwich maker, you can toast the same over tawa, but do it in low flame.
Other uses:
You can also use the sandwich filling to make a quesadilla with multigrain or whole-wheat tortillas.
Spicy:
You can make the filling spicier by sprinkling chilli on top after spooning.

Materials
- 2 tablespoon butter
- 1/2 cup onion chopped
- 1/2 cup tomato chopped
- 1/4 cup green capsicum chopped
- 1/4 cup red/yellow capsicum chopped
- 1/2 Sweet corn boiled/steamed
- 1/2 cup Grated Cheese
- 1/4 teaspoon black pepper optional
- 1/4 teaspoon or to taste red chilli flakes
- 1/4 teaspoon oregano or to taste
- 12 slices bread
Instructions
- Heat the butter in a broad pan, add the chopped onion,
- and saute on a medium flame for a minute.
- Add chopped tomato, and saute on a medium flame for a minute.
- Add coloured capsicum, corn and cheese and saute on a medium flame for a minute.
- Finally, add spices like black pepper, chilli flakes, and oregano and saute on a medium flame for a minute while stirring continuously.
- Cut the crust of bread and apply butter over the bread slices.
- Then, Apply a generous portion of the veggie mixture evenly on the bread slice.
- Sandwich it with another bread slice.
- Apply the butter on the bread slice and keep aside.
- Place this sandwich in a pre-heated griller with the butter side facing downwards.
- Now, apply butter to another bread slice.
- Grill the sandwich till it turns crispy and brown from both sides.
- Cut the sandwich diagonally into two portions.
- Serve immediately.
