Matar Ki Kheer Recipe–Green Peas Pudding(Step by step)
Boil the milk in a heavy-bottom deep pan over medium heat, till it reduces to half its original quantity while stirring constantly.
Wash the green peas carefully. Grind the green peas coarsely.
Add saffron to milk and mix it well.
Heat ghee in a heavy bottom pan and allow it to melt. Add Green Peas into a pan and cook on low-medium flame.
Keep stirring continuously. Cook for 5-8 minutes over medium flame, when ghee starts separating from the past.
Mix raisins, cashew nuts, and almonds into the roasted peas.
Mix well and cook for 2-3 minutes.
Reduce the flame and add the milk.
Mix saffron milk in the roasted green pea paste and cook.
Add sugar and cardamom powder in kheer and cook for 2 more minutes.
When kheer gets thick in consistency and is ready. Turn off the flame.
Matar Ki Kheer is ready to serve in a bowl.

- 1 liters full fat Milk
- Sugar to taste
- pinch of saffron
- 1/2 teaspoon Green cardamom powder
- 1 tablespoon Raisins or as required
- 1 teaspoon cashew nuts sliced
- 1 teaspoon almonds sliced
