Matar ki Kheer (Green Peas Kheer)

Ingredients

  • 1 cup Green Peas
  • 1 tbsp Ghee or unsalted butter
  • 1 liters full fat Milk
  • Sugar to taste
  • 1 pinch of saffron
  • 1/2 tsp Green cardamom powder
  • 1 tablespoon Raisins or as required
  • 1 tsp cashew nuts sliced
  • 1 tsp almonds sliced

Instructions

  • Boil the milk in a heavy-bottomed deep pan over medium heat till it reduces to half its original quantity while stirring constantly.
  • Wash the green peas carefully. Grind the green peas coarsely.
  • Add saffron to the milk and mix it well.
  • Heat 1 tbsp ghee in a heavy-bottom pan and allow it to melt. Add prepared Green Peas Paste and saute on low-medium flame.
  • Stir continuously to avoid burning.
  • Cook for 5-8 minutes over medium flame until ghee oozes out from the paste.
  • Add Dry fruits like raisins, chopped cashew nuts, almonds, etc., into the roasted peas.
  • Saute them for 2-3 minutes.
  • Reduce the flame and add the boiled milk.
  • Add saffron milk to the cooked green peas and cook over medium heat for another 5-8 minutes.
  • Add sugar and cardamom powder to the kheer and cook for 2 more minutes.
  • Cook for another 5 minutes until the kheer thickens.
  • When the kheer gets thick in consistency and is ready, our Matar ki Serve it warm or chilled as desired.

Notes

Recipe Notes

  • For a richer taste, add condensed milk.
  • Adjust sugar as per taste.
  • Add rose water or kewra essence for extra aroma.
  • It can be made vegan using coconut milk and jaggery.
