Boil the milk in a heavy-bottomed deep pan over medium heat till it reduces to half its original quantity while stirring constantly.
Wash the green peas carefully. Grind the green peas coarsely.
Add saffron to the milk and mix it well.
Heat 1 tbsp ghee in a heavy-bottom pan and allow it to melt. Add prepared Green Peas Paste and saute on low-medium flame.
Stir continuously to avoid burning.
Cook for 5-8 minutes over medium flame until ghee oozes out from the paste.
Add Dry fruits like raisins, chopped cashew nuts, almonds, etc., into the roasted peas.
Saute them for 2-3 minutes.
Reduce the flame and add the boiled milk.
Add saffron milk to the cooked green peas and cook over medium heat for another 5-8 minutes.
Add sugar and cardamom powder to the kheer and cook for 2 more minutes.
Cook for another 5 minutes until the kheer thickens.
When the kheer gets thick in consistency and is ready, our Matar ki Serve it warm or chilled as desired.
