Carrots: Carrots are the star ingredient of carrot milk, providing natural sweetness, vibrant colour, and a host of nutrients. They are rich in beta-carotene, a precursor to vitamin A, vitamins C, K, and B6, potassium, and dietary fibre.

I have used red carrots in this recipe, but you can also make it using regular orange carrots. Try to get organic carrots for maximum health benefits.

Nuts – Almonds and cashews add a creamy and rich texture to the carrot milk.

Milk: Milk adds essential nutrients such as calcium, vitamin D, protein, and B vitamins to the drink.
I used Full-fat milk in this recipe, but you can also use alternatives like almond, coconut, or oat milk for a dairy-free option.

Sweetener: You can adjust sweetness as per your taste. I used Regular sugar but you can also add a natural sweetener like honey, Jaggery, agave, honey, maple syrup, or dates as a substitute for sugar, to enhance the sweetness of carrot milk.

Spices: We can also use Spices like cinnamon, nutmeg, dry ginger, or cardamom can be added to carrot milk to enhance its flavour profile and add warmth and complexity to the beverage.

You can also add a few saffron strands in the drink to improve sleep quality like Masala milk.

Garnish: Almonds and cashew nut slivers can be added to carrot milk before serving.

  • Wash and peel the carrots thoroughly before chopping them into small pieces and add water, chopped carrot almond and cashew nuts into a deep pan.
  • Cook over medium heat for 8-10 minutes until the carrots become soft.
  • Transfer the ingredients into a blender and blend until smooth and keep aside.
  • Boil the milk with a cinnamon stick in a deep pan over medium heat and Stir frequently to avoid scorching.
  • Reduce the heat to low, and add the prepared carrot paste to the pan and cook for 8-10 minutes on low heat. Stir frequently.
  • Add cardamom powder and sugar to taste, and cook it for another 3-4 minutes.
  • Pour the carrot milk into serving glasses, garnish with slivered almonds and pistachios, and serve hot. You can also serve it chilled if you wish to.

Materials

  • 2 cup peeled and cubed carrot yellow or red carrots
  • 5-8 whole cashew nuts
  • 5-8 whole almonds
  • 1.5 cup water
  • 4 cup whole milk
  • 1 cinnamon dalchini
  • ½ teaspoon ground cardamom hari elaichi powder
  • ¼ cup sugar or to taste

Instructions

  • In a deep pan, add water, chopped carrot almond and cashew nuts.
  • Cover it and cook over medium heat for 8-10 minutes until the carrots become tender.
  • Remove the pan from heat and let the ingredients cool down completely.
  • Transfer the ingredients into a blender and blend until smooth and keep aside.
  • Boil the milk with a cinnamon stick in a deep pan over medium heat and Stir frequently to avoid scorching.
  • Reduce the heat to low, and add the prepared carrot paste to the pan and cook for 8-10 minutes on low heat. Stir frequently.
