Cucumber (Kheera) Lassi
Cucumber Lassi is a simple, easy and quick yoghurt drink made with cucumber and yoghurt. It is also a luscious beverage that works great along with a meal! This can be made vegan (Just replace yoghurt with coconut yoghurt or soy yoghurt).
Cucumber lassi is a variation of spiced masala lassi generally prepared at home during summer. How to make Cucumber Lassi?
Ingredients required for Cucumber Lassi:
Cucumber: You can use any variety of fresh cucumbers, like English, Persian etc. As per your taste and availability.
Yoghurt – Whenever you’re making Lassi or Buttermilk, make sure to use chilled yoghurt/dahi. You can use homemade or store-bought dairy or dairy-free plain yoghurt (dahi, curd) to make the chaas. Use homemade Dahi or store-bought.
Roasted cumin powder: For roasted cumin powder, dry roast the cumin seeds when they get a nice golden brown colour. Let them cool down, and using a spice grinder or mortar and pestle grind them into a powder.
Other Spices(optional): You can add some finely chopped green chilli, ginger and chat masala per taste. Adjust the green chillies as per your taste.
Herbs: Fresh Green Coriander and mint Leaves give the buttermilk a refreshing feel.
Water and salt– We also require chilled water and salt to make Spiced buttermilk. But please use chilled water if serving right away.

Method:
- Wash, Peel and chop the cucumber and grind with green chilli, ginger, coriander, mint leaves, cumin powder and salt for a minute.
- Add yoghurt and water and blend again for a minute.
- Pour into serving glass.
- Serve immediately.

Suggestions
- Lassi and Chaas taste best when served chilled. So always use chilled Dahi/Curd and chilled water.
- You can store it in the refrigerator if you are not serving it right away, stir first and then pour Lassi into the glass and serve chilled.
- You can even do a tempering with oil, mustard seeds jeera. In that case, you can skip jeera while grinding.
- You can add Chat Masala in place of roasted and powdered cumin powder.
- You can Skip fresh coriander, mint leaves and ginger as per your taste.
- Use fresh mint leaves only. The dried leaves will not give the desired flavour to this drink.
- Adjust consistency according to preference but dough is traditionally thin in consistency.

FAQs Related To Salted Cucumber Lassi
Cucumber Lassi taste the best when served fresh! It will last in the fridge for 2 days when stored in an airtight container. You can make a cucumber puree in advance and store it in an airtight container in the refrigerator. Use as and when required. Add water, curd, salt and spices according to your taste and requirements into the prepared puree, and your Cucumber Lassi is ready.

Materials
- 1.5 cup Dahii/Yoghurt chilled
- 1 cup Fresh Cucumber Peeled and chopped
- 1/2 teaspoon Cumin Powder Roasted
- chilled water As required
- Salt As required
- Black Salt (optional) to taste
- 1 teaspoon Green Chili(opional) chopped
- 1/2 teaspoon Ginger (optional) Chopped
- 2 tablespoon Coriander Leaves(optional) chopped
- 2 tablespoon Mint Leaves(optional) chopped
Instructions
- Wash, Peel and chop the cucumber and grind with green chilli, ginger, coriander, mint leaves, cumin powder and salt for a minute.
- Add yoghurt and water and blend again for a minute.
- Pour into serving glass.
- Serve immediately.
Notes
You can also prepare it a few hours before serving and allow chill it in the refrigerator.
Adjust the amount of water depending on how thick your curd is.
It can be stored in an airtight jar in the refrigerator for up to 2 days.
You can add chat masala instead of cumin powder.
You can add ice cubes if needed.
