Daliya ki kheer:
Daliya ki Kheer/Metha Daliya is the most popular breakfast cereal in North India, main ingredients for its preparation are broken wheat and milk. Broken wheat is a good source of iron, magnesium, and phosphorus. broken wheat/Dalia has high fibre content, which helps in keeping the digestive system healthy.
It has high fiber content, which not only helps in keeping the digestive system healthy but also keeps the hunger at bay for a longer
time. Daliya is very good for all age people. You can give Daliya(दलिया)ki kheer to babies as it is very nutritious and easy to digest and kids just love its creamy texture and taste. Old age people have difficulty digesting heavy food but this daliya ki kheer is also good for them.
Being a complex carbohydrate, the rate at which it gets digested is slow thus releasing glucose on a slow and sustained rate. This makes it an ideal food for diabetics, people wanting to lose weight or those who have high cholesterol levels.
Broken wheat (dalia) Kheer Recipe(step by step recipe)
Method:
Heat ghee in a heavy and deep pan and add Dalia over medium flame. Sauté till fragrant.
Add water and milk to the roasted dalia and stir to mix.
Cook for another 5-8 minutes over medium heat.
Add saffron and mix well and cook for 2 minutes.
Add sugar and chopped dry fruits mix well.
It should be creamy.
Garnish with dry fruits and serve.

Materials
- 1 tablespoon ghee
- 1/2 cup Bulgur/ broken wheat
- 500 ml of milk
- 2 tablespoon Sugar or as required
- 2 teaspoon almond chopped
- 2 teaspoon cashew-nuts chopped
- 2 teaspoon raisins
- 1/2 cup water
- 1 pinch Safron optional
Instructions

Note:
- Adjust the thickness and sugar according to your taste by adding more milk.
- Serving suggestions-serve for breakfast or as a dessert.
- You may also make use of Jaggery or brown sugar.
- For jaggery add it finally once kheer is cooked.
