Mango Salad Dressing is a healthy, gluten-free, sweet and spicy creamy salad dressing recipe.

Ingredients
1cupfresh ripe mango pitted and roughly chopped
1.5tablespoonfresh lime juice
3clovegarlic
1/2cup mint /Cilantro or Coriander leaves
1/2cupextra virgin olive oil
salt to taste
black pepper to taste
1-2 chilli pepperoptional
1tablespoonhoney or maple syrupoptional
Instructions
Add the mango pieces to your food processor along with lime juice, honey, garlic, salt, chilli, black pepper and mint. Blend on medium speed until smooth.
Slowly drizzle in the olive oil while the motor is running.
Taste and add a bit more salt, if needed.
Transfer the dressing to a jar with a lid. Chill for a few hours or serve immediately.
Notes
Shake well before using.
Store in the refrigerator for up to 1 week.
Use a food processor if you have one with an open spout to pour the olive oil while mixing the ingredients, and that mango magically emulsifier and becomes super smooth.
