Tamarind Rice Recipe:
Today I am going to share a post on one of the popular dish called Tamarind Rice| Puliyodharai. Pulihora is a very simple and flavourful rice. It is a very popular dish in south India and it is served as ‘Prasadam’ in most of the temples. The process of making Tamarind rice Recipe is started by making tamarind paste with grounded spices and then mixing it with steamed rice. There are so many variations in preparing this rice.

Ingredients for Tamarind Rice Recipe
Main Ingredient: pressure-cooked rice/steamed rice
For the Dry Roast and Grind:
1.5 teaspoon chana dal
1 teaspoon coriander seeds
1-2 teaspoon Urad dal
2 teaspoon sesame seeds
1/4 teaspoon Methi dana
1/4 teaspoon hing
1-2 red chilli
For Tamarind mixture:
- Rice -2 cups cooked rice
- 2 teaspoon urad dal
- 1 tablespoon oil
- 2 teaspoon chana dal
- 2 tablespoon Peanuts
- 10-12 curry leaf
- 1/4 teaspoon hing(Asafoetida)
- 1/2 teaspoon mustard seeds
salt to taste
Tamarind -lemon size
1 Red chilli
1 green chilli
Turmeric powder -1/2tsp
Preparation:
Soak tamarind in a bowl with hot water.
Method:
Step 1 Making Dry Masala Powder:
Heat a pan on medium heat, and add chana dal, urad dal, coriander, fenugreek seeds, red chilli and sesame seeds and stir continuously.
Add asafoetida and fry the lentils till they turn golden in colour.
Keep them aside and let them cool, and grind them.
Our masala powder is ready.
Step 2 Making the Pulihora paste:
Place the oil pan in a heavy bottom kadhai/pan on medium heat.
Add peanuts, urad dal and chana dal to the oil and stir continuously.
Now add mustard seeds, asafoetida, green chillies, curry leaves and red chillies.
Stir continuously until the lentils turn golden brown.
Now add turmeric, and salt and constantly mix tamarind pulp.
Keep it covered and keep stirring at regular intervals and cook on medium flame till the oil leaves.
Once it starts leaving the oil, turn off the heat and let it cool down.
Step 3 Mixing:
Now take out the cooked rice in a deep vessel.
Sprinkle spice powder in rice as required and mix them well.
Now add tamarind mixture as required and mix well.
Add salt if needed.
Our Pulihora is ready. Serve with papad.
Suggestions:
Traditionally Tamarind rice is served with a side of chips, and papadam.

- Once it starts leaving the oil, turn off the heat and let it cool down.
Step3: Mixing
- Now take out the cooked rice in a deep vessel.
- Sprinkle spice powder in rice as required and mix them well.
- Now add tamarind mixture as required and mix well.
- Add salt if needed.
- Our Pulihora is ready.

You can use any type of full-boiled rice for preparing this puliyogare rice.
YES. You can choose either of the variety. In this recipe, I have used white sesame seeds.
