Ingredients
1cupghee
1cup- Rajgira AttaAmaranth Flour
1/4cupDried Grated Coconut-optional
1/4cupNuts as per taste-(optional)
2tbspRaisinsoptional
500mlMilkwarm
1/2cupSugar or as per taste
1/2tspCardamom Powder
2tspAlmond slivers for garnish
Instructions
Heat a cup of ghee in a pan over medium flame.
Once the ghee is hot, add a cup of Rajgira flour to the pan and mix it well. Make sure there are no lumps.
Roast the atta until it turns golden brown and a nutty aroma starts (10-12 minutes).
Add dried grated coconut, nuts and raisins as per liking.
Keep stirring frequently while roasting to avoid the atta burning at the bottom.
Once the flour is golden brown, add 500ml of warm milk to the pan and cook until all the milk is soaked by the flour (1-2 minutes).
Add ½ cup sugar and 1/2 teaspoon cardamom powder and cook until halwa turns dark brown and the ghee separates from the sides (3-4 minutes).
Keep stirring continuously while cooking.
Garnish with almonds slivers.
Serve hot or at room temperature.

The right consistency is important. The halwa should be soft and moist but not too runny. Add water carefully to avoid making it too watery.
Ghee (clarified butter) adds richness and flavour to the halwa. However, you can adjust the amount according to your preference or dietary restrictions.
