1cuppeanuts
3-4dry red chiliesadjust to taste
6-8garlic cloves

TemperingOptional:
1tbspoil
1/2tspmustard seeds
A pinch of asafoetidahing
1tspurad dal
1tspchana dal
2red chillies
5-6curry leaves
Instructions
I pan-roast the peanuts on medium heat until golden brown. Let them cool.
Heat 1 tsp of oil in a pan and add the following ingredients:
3-4 dry red chillies
1 tsp cumin seeds
1-inch ginger piece
6-8 garlic cloves
Saute them for 2-3 minutes over medium flame.
Now add 1 chopped onion and saute it until golden brown, switch off the flame and keep them aside to cool down.
Add roasted spice mix, roasted peanuts with salt and 1 tsp tamarind pulp into the blender jar.
Add a little water and blend until smooth. Adjust water for desired consistency.
Prepare the Tempering (Optional): Heat oil in a small pan. Add urad dal, chana dal, mustard seeds,red chilli, asafoetida, and curry leaves. Once they crackle, pour the tempering over the chutney.
Serve: Transfer the chutney to a bowl and serve fresh with your favourite dishes.

For a tangy twist, replace tamarind with lemon juice.
Add grated coconut or green chillies for variations.
Store in the refrigerator for 2 days or freeze for longer use.
