1cuppeanut buttersmooth or crunchy
1cuprolled oatscertified gluten-free, if required
1/2cupdark chocolate chips
1/4cuphoney or maple syrup
1tspvanilla extract

Instructions
In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between until smooth.
In an another bowl combine the peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth.
Add the oats to the peanut butter mixture and add the melted chocolate. Stir until well combined.
Scoop spoonfuls of the dough and form them into cookies on a parchment-lined tray. Press lightly to flatten.
Refrigerate the cookies for 30 minutes to set. Once firm, enjoy your no-bake cookies!
Notes
