Ingredients

  • 1 cup peanut butter smooth or crunchy
  • 1 cup rolled oats certified gluten-free, if required
  • 1/2 cup dark chocolate chips
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: Chopped nuts (like almonds or walnuts

Instructions

  • In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between until smooth.
  • In an another bowl combine the peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth.
  • Add the oats to the peanut butter mixture and add the melted chocolate. Stir until well combined.
  • Scoop spoonfuls of the dough and form them into cookies on a parchment-lined tray. Press lightly to flatten.
  • Refrigerate the cookies for 30 minutes to set. Once firm, enjoy your no-bake cookies!

Notes

  • A adjust honey or maple syrup as per your taste.
  • Use maple syrup instead of honey and check that the chocolate chips are dairy-free.
  • Feel free to add dried fruits or coconut flakes for a twist.
  •  Store in an airtight container in the fridge for up to a week, or freeze for up to 3 months.
