Hyderabadi Badam Ka Harira Recipe – Traditional Almond Milk Drink

Ingredients

  • 1/4 cup Almonds soaked and peeled
  • 500 ml Full-fat milk
  • Pinch of Saffron strands
  • 1/2 tsp Cardamom powder
  • Sugar or jaggery to taste
  • 1/2 tsp nutmeg powder
  • 1/2 cup Water
  • 1 tsp ghee

Instructions

  • Soak and peel almonds; grind into a smooth paste.
  • In a heavy bottom pan and add ghee.
  • Now add wheat flour and roast on low heat till it start giving a nice aroma and becomes light brown(addition of wheat flour is optional but it gives a nice flavour and thickness to the harira)
  • Add almond paste and roast on low heat to a nice golden colour.
  • Now add milk and saffron and let it come to a boil and then simmer for 5-8 minutes.
  • Now add cardamom powder and nutmeg powder.
  • Add sugar and let it cook for 2 minutes.keep stirring it else it may stick to the bottom.
  • Remove from the flame.
  • Garnish with Almond and Pistachio slivers and pinch of saffron and serve piping hot at breakfast or dinner.

Suggestions:
You can use a mix of nut powder instead of using almond powder.
You can adjust the thickness of the harira as per your preference by adding more or less quantity of milk.
