1 cup fresh cilantro coriander leaves, tightly packed 1/2 cup fresh mint leaves tightly packed 1-2 green chillies adjust to taste 4-5 cloves of garlic 1 inch piece of ginger roughly chopped 2 tablespoons lemon juice 1/4 tsp of sugar to balance the flavors Salt to taste water as needed for blending
Prepare the ingredients: Wash the cilantro and mint leaves thoroughly.
Blend: Combine the coriander, mint, green chillies, garlic, and ginger in a blender or food processor with a little water and blend until smooth.
Add the lemon juice, salt, and sugar as required.
Add more water to achieve a smooth consistency and blend until smooth
Adjust seasoning: Taste and adjust the salt, lemon juice, or sugar if necessary.
Serve: Transfer the chutney to a bowl. Serve immediately or store in an airtight container in the refrigerator for up to a week.
