Ingredients

  • 2 tablespoon oil tail
  • ½ teaspoon mustard seeds rai
  • 1 teaspoon Bengal gram spilt channa dal
  • 1 teaspoon Black gram split urad dal
  • 2 whole red chilli lal mirch
  • 1-2 Green chillies finely chopped optional
  • 1 Onion chopped medium size chopped
  • 1.5 cups cooked rice
  • 1 spring Curry leaves
  • 1 cup tomatoes chopped
  • Salt to taste
  • 1 teaspoon ginger chopped
  • 1/2 teaspoon red chilli powder
  • 1 teaspoon garlic chopped
  • 1-2 tablespoon cashew nuts broken

Instructions

  • In a large heavy bottom pan heat the oil.
  • Add the red chilli, channa dal, urad dal and some broken cashew nuts.
  • Stir continuously till they (ingredients) turn slightly golden in colour.
  • Make sure that you get light brown colour in cashew nuts also.
  • Add mustard seeds, when they start to splutter.
  • Add Chopped green chilli, curry leaves and salt, ginger and garlic.
  • Now add chopped onion.
  • Sauté for 2-3 minutes until onions are slightly transparent.
  • Add chopped tomatoes, salt and red chilli powder stir and then cook over medium heat cook till these tomatoes are mushy and soft.
  • Now Cover them and cook for 5 minutes, Keep stirring it occasionally.
  • Add the cooked rice, mix them all together.
  • Add more salt if needed, cover and cook for 2 minutes.
  • Our tomato rice is ready, Serve it hot
