In a large heavy bottom pan heat the oil.
Add the red chilli, channa dal, urad dal and some broken cashew nuts.
Stir continuously till they (ingredients) turn slightly golden in colour.
Make sure that you get light brown colour in cashew nuts also.
Add mustard seeds, when they start to splutter.
Add Chopped green chilli, curry leaves and salt, ginger and garlic.
Now add chopped onion.
Sauté for 2-3 minutes until onions are slightly transparent.
Add chopped tomatoes, salt and red chilli powder stir and then cook over medium heat cook till these tomatoes are mushy and soft.
Now Cover them and cook for 5 minutes, Keep stirring it occasionally.
Add the cooked rice, mix them all together.
Add more salt if needed, cover and cook for 2 minutes.
Our tomato rice is ready, Serve it hot
