Ingredients
1/4cupcarrotgrated
1/4cuponionchopped
1/4cupgreen capsicumchopped
1/4cuptomatochopped
1/4cupred capsicumchopped
1/4cup sweet cornsteamed
1/4cupcucumberchopped
1cupMayonnaise
1teaspoonchilli flakesor to taste
1/2teaspoonoreganooptional or as per your taste
1/4teaspoongrounded black pepperor to taste
Butter as required
Cheese Spread as required
Instructions
Mix mayonnaise, carrot, onion, carrot, tomato, sweet corn, cucumber, green and red capsicum, chilli flakes, Oregano and black pepper in a bowl.
Apply butter and cheese as per your taste over bread slices.
Keep some filling over one bread slice and cover with another bread slice.
Cut into triangles and serve.

Variations For the vegetables: you experiment and add vegetables of your choice such as mushrooms, spinach, green peas, potato and shredded cabbage, etc.For butter: You can use olive oil in place of butter.Mayonnaise: you can also use Hung curd/yoghurt instead of Mayonnaise. It gives the same creamy texture as the mayonnaise sandwich.
