Ingredients

  • 2 teaspoon chia seeds (black or white)
  • 4 tablespoon simple sugar syrup (You can substitute agave nectar, honey, or maple syrup)
  • 2 tablespoon fresh lime juice
  • 1 tablespoon fresh mint leaves crushed
  • 2 cup water or soda water chilled
  • 1/2 cup ice cubes

Instructions

preparation:

  • Lightly crush the mint leaves with 1 tablespoon of water in a mortar pestle.
  • In a medium bowl, mix the chia seeds with 1 cup cold water. Let stand 15 minutes. Drain and rinse the seeds.

Method 1:

  • Mix ingredients in pitcher and taste.
  • Add ice and serve in decorative glasses. 

Method 2

  • In the glass, place ice cubes or crushed ice.   
  • Pour one tablespoon of soaked chia seeds and crush mint leaves in a glass.
  • Pour two tablespoon of tablespoon sugar syrup and 1 tablespoon lemon juice over it and stir using a stirrer.
  • Top the glass with chilled with soda water or chilled water and stir to mix all ingredients.  
  • Garnish with lemon slices and serve immediately.
  •  Repeat the same steps to make more drinks.

Notes

  • For a sweeter drink, add more simple syrup.
  • For a tarter drink, add more lemon juice.
