Ingredients

  • 1 cup Green Peas
  • 1 tablespoon Ghee or unsalted butter
  • 1 liters full fat Milk
  • Sugar to taste
  • pinch of saffron
  • 1/2 teaspoon Green cardamom powder
  • 1 tablespoon Raisins or as required
  • 1 teaspoon cashew nuts sliced
  • 1 teaspoon almonds sliced

Instructions

  • Boil the milk in a heavy-bottom deep pan over medium heat, till it reduces to half its original quantity while stirring constantly.
  • Wash the green peas carefully.
  • Grind the green peas coarsely.
  • Add saffron into milk and mix it well.
  • Heat ghee in a Heavy bottom pan and allow it to melt.
  • Add Green Peas into a pan and cook on low-medium flame. Keep stirring continuously.
  • Cook for 5-8 minutes over medium flame, when ghee starts separating from the past.
  • Add raisins, cashew nuts, and almonds into the roasted peas.
  • Mix well and cook for 2-3 minutes.
  • Reduce the flame and add the milk.
  • Add saffron milk in the roasted green pea paste and cook.
  • Add sugar and cardamom powder in kheer and cook for 2 more minutes.
  • When kheer gets thick in consistency and is ready.
  • Turn off the flame and serve kheer in a bowl.

Notes
