Poha Kheer is one of the easy Kheer varieties that we can make. Poha(Flattened rice) is healthy and also quick and easy to cook. This Kheer has the yellow colour of saffron, a richness of nuts and the sweetness of milk and condensed milk. Saffron adds a nice appealing colour to the Kheer.
Poha is a good source of carbohydrates, is packed with iron, is rich in fibre, and is a good source of antioxidants and essential vitamins.

How To Make Poha Kheer?

Ingredients:

Poha: You can use White or Red or any variety of Poha. But make sure that the thick variety of the poha is used.

Whole Milk: Always use whole milk for making payasam (kheer).

Sweetener: Add any of the sweeteners of your choice like sugar, jaggery, condensed milk etc.

Garnish: You can use any topping of your choice for the recipe. You can use thinly chopped dry fruits, saffron etc.

Preparation

  • Rinse the poha to remove the dust or other particles and then soak it for 5 mins.
  • Soak the saffron strands in 2 tablespoons of warm milk.

Method

  • Heat the milk in a deep pan, over medium flame.
  • Add poha to milk, when the milk starts to boil.
  • Cook this poha and milk mixture, for 5-8 minutes, over a low flame, while stirring continuously.
  • Add sugar, and cook until sugar dissolves.
  • Add cardamom powder, saffron and dried fruits and mix it well.
  • Cook for another 2 minutes, stirring continuously.
  • Poha kheer is ready.
  • Garnish it, and serve it hot or warm or chilled as per your taste

Suggestions

  • Thin poha can be used instead of thick poha.
  • If you are using thin Poha, avoid soaking.
  • If you are using to use red flattened rice, then soak it for an additional time.
  • Adjust the sugar quantity according to your taste. You can also use jaggery instead of sugar.
  • You can use condensed milk instead of sugar.

Condensed Milk: You can use condensed milk in this recipe. You can add or skip the sugar and add only condensed milk.

Almond Paste: almond paste is optional but this adds richness to the kheer.

Jaggery: Jaggery can be added instead of sugar. If adding jaggery, then add it after the milk comes to a boil. Switch off the flame and add jaggery and mix it very well.

What kind of poha is best for the Poha Kheer?

Always prefer Thick flattened flakes for the kheer recipe. Avoid paper poha as it might not hold shape in the Kheer.
If you are using thin poha avoid soaking them. Boil the poha in milk and prepare Kheer.

Can I use Condensed milk for Poha Kheer?

Yes, you can, in that case, skip the sugar.

Can I make vegan Poha Kheer?

Yes, you can use coconut milk instead of milk and prepare Kheer.

Materials

  • 1/2 cup Poha/Choora/ Flattened rice thick
  • 500 ml Milk
  • 1 tablespoon Dry fruits as per your choice
  • Sugar or jaggery to taste
  • ¼ teaspoon Green cardamom powder
  • pinch of saffron few strands soaked in warm milk
