Basic Chopped Salad:

Today I am going to share a post on How to make quick, easy and healthy salad recipe which is Basic Chopped Salad, with fresh herbs and a light dressing. It’s the perfect summer side salad.

Basic chopped salad

This salad is light and delicious with tons of flavour. This chopped salad appears super simple but it is full of great flavours, colours and textures. The key to flavour consistency in this salad is to dicing of vegetables to a similar size.

The best thing about this Salad is how easy it is to make. I love the idea of chopped salad. just make it bite-size and toss it in. you don’t even have to cook anything!

Basic chopped salad

Once you have all of your vegetables prepped, just add the herbs, a little lemon juice, olive oil and sea salt. Mix everything and you’re ready to serve!

Materials

  • 1 cups tomatoes diced 
  • 1 cups cucumber diced
  • ½ cup bell pepper diced, optional
  • 1/2 cup carrot diced, optional
  • ¼ cup red onion diced
  • ¼ cup  mint chopped
  • ¼ cup  parsley or green coriander chopped
  • 2 Tablespoons fresh lemon juice
  • 2 Tablespoons extra virgin olive oil
  • 1/4 teaspoon Sea salt or to taste

Instructions

  • Combine all ingredients together in a large bowl. 
  • Season with salt to taste and mix everything together. 
  • Refrigerate until ready to serve.

  • You can add or remove any vegetable in this recipe as per your taste.
  • If you like a spicy salad you can also add chilli flakes or chopped green chilli as per taste.

  • Pepperoncini’s can be spicy, so substitute for bell pepper if you don’t like spicy flavours.
  • Store leftovers in an airtight container (or a bowl tightly covered with plastic wrap) in the refrigerator for up to 2 days. Before serving, toss with a little extra lime juice and a pinch of salt.
  • If using a regular cucumber, peel, halved lengthwise, and remove seeds before chopping.
